This coffee is the first single farmer lot release of the year from Honduras, and is a testament to our growing commitment to support smallholders through Semilla.
Maria, who started producing coffee in the 80s, is a third generation farmer. She has worked tirelessly for decades to build quality while also acquiring a little more land. This resulted in coffee being a financially crop for her and her family, and she could show her children that there is a future in coffee farming after all.
Recent years have seen low market prices and a huge increase in cost of production, but by focusing on quality and building relationship with international buyers, she still persevered so we can enjoy her delicious crop.
Some word from Maria: “I wish to one day welcome buyers and supporters of our coffee into our home, to share a cup of coffee and give them a chance to see our farm and learn more about this generous and rewarding crop.”
As a small company, Rabbit Hole has never travelled to meet farmers; it never made much sense. But we truly hope that in the near future, we can meet all the farmers we buy from every year and who are making our business possible.

OUR IMPRESSIONS
Maria’s Parainema is rich and indulgent from the first sip. There’s a velvety sweetness that immediately recalls arequipe - that thick, deeply caramelized condensed milk spread from Colombia, darker and more intense than classic Argentinean dulce de leche (a little wink to V.’s roots).
Chocolate batter and soft sponge cake follow, giving the cup a pastry-like foundation. Strawberry and whipped cream add a creamy lift, while David’s impression of black raspberry and forêt noire cake captures the darker fruit and chocolate interplay beautifully.
It’s comforting, clean, balanced, and easy to drink. It shines as filter or espresso. With milk - especially in smaller drinks like a macchiato or piccolo - the chocolate and caramelized sweetness deepen without getting drowned out.
HOW PROCESSING IMPACTS FLAVOUR
Cherries are picked and pulped on the same day, followed by a dry fermentation process that lasts 35 to 45 hours in tiled tanks. After fermentation, the beans are placed on covered raised beds to dry for 25 to 30 days. Once dried, the cherries are stored in hermetically sealed bags to maintain their quality.
