Released in July 2025, Roasted 1.0 introduced our new Stronghold S9X through one of our favourite coffees at the time: Alejandro Rodriguez. It marked the beginning of the Roasted series, giving us, and you, a first look at how a different roast profile could shape the final cup.
Just a few months after installing the Stronghold, Beau was already setting time aside to experiment alongside our regular production. Roasted 1.0 became the very first release in what would grow into an ongoing series of roast experiments.
It was a lighter, brighter expression of Alejandro Rodriguez.

THE IDEA BEHIND ROASTED
Roasted is our ongoing experiment in answering a simple question: How much can roasting alone change a coffee?
Instead of changing the origin, processing method or producer, we keep the coffee the same and explore what happens when we change only the roast profile. Sometimes the differences are subtle. Sometimes they're surprisingly dramatic.
Each Roasted release is the result of countless production batches, cuppings and conversations around the table. Some profiles stay behind in the workshop. Others earn a place on the shelf.
Roasted 1.0 was the very first one of those coffees.

Roasted 1.0 marked Beau's first experiments with the Stronghold S9X, only a few months after it arrived at the roastery. For this release, he explored one of the machine's unique capabilities by using an exceptionally low drum temperature throughout the roast.
The goal was to see how that single variable could influence the final cup. The result was a lighter, brighter expression of Alejandro Rodriguez, and the beginning of what would become the Roasted series.
