We're so happy to be sharing this rare Liberica lot from 96B on the menu for the second year, but this time through Crop to Cup. Since they have their own roasting project and are one of the few specialty coffee companies in Saigon, they do not export much coffee nor work with many partners outside of Vietnam. When Thai, one of the co-founders, texted David to see if he was interested in bringing some in for RH, he jumped at the opportunity. Our shared values made this a natural fit, both in ethos and in the cup.
96B is a Saigon-based roaster, café, coffee education centre, green bean producer & exporter. They focus on Liberica, Robusta & Arabica coffees grown and processed in Vietnam. While the country is mostly known worldwide as the largest commodity Robusta producer, they’re actively working to redefine that narrative by collaborating closely with innovative farmers.
“Direct trade allows us to optimize our quality control, while compensating farmers fairly for their work, improving their livelihoods in a radical and immediate way. Since 2016, almost all the coffees we have bought are priced by the farmers.”
Each lot of these exclusive coffees adheres to high social and quality standards: - Mutually beneficial relationships with producers - Respect for health and environment - Red cherries: only ripe cherries are picked and sorted - Controlled drying: most coffees are slow-dried in greenhouses to improve cup quality - Defect picking: both machine and hand-sorting are used to remove defects

OUR IMPRESSIONS
Liberica is a completely different coffee species from Arabica and Robusta, and you'll notice it from the very first sip!
If you've been following Rabbit Hole for a while, you know we don't make bold claims lightly. We loved this coffee so much the first time we roasted it that bringing it back was an easy decision.
This lot is intensely aromatic and surprisingly sweet. Expect notes of ripe strawberry and strawberry blossom, followed by white grape, white chocolate and a deep, savoury finish reminiscent of roasted black sesame. Some cups even show a touch of citrus that brings extra brightness to the experience.
What really stands out to us is the sweetness. Beyond the white chocolate notes, there's an almost stevia-like sensation that lingers on the palate long after the coffee is gone. It's unusual, memorable and one of the reasons this coffee has stayed with us.
What fascinates us most about Liberica is how difficult it is to compare. It borrows a little from Arabica, a little from Robusta, yet ultimately tastes like neither. It simply tastes like… Liberica!

Important to note that the farmers working with 96B are price setters and not price takers. Very few farmers have control over their own pricing worldwide, notably because of buyer's greed and the broken C-Price system to name only these two major problematic systems.
It takes a willing buyer like Thai to let farmers dictate price, and something we wish to see normalize in specialty coffee across the board.
REUSING YOUR TIN
♻ Designed as a collector's item or to be reused, your tin was made to stick aroundlong after the coffee is gone.
CARE INTRUCTIONS
♡ To keep it in good condition, store it in a cool, dry place away from direct sunlight and heat sources. When needed, wipe the inside and outside with a damp cloth rather than soaking it in water. We recommend avoiding full submersion and dishwasher use, as both can lead to rust over time.
Allow the tin to dry completely before reuse, paying special attention to the lid, rolled edges and sealing components where moisture can accumulate.
⚠ Do not remove, puncture or tamper with the one-way degassing valve located on the top of the tin. The valve helps release excess gas from freshly roasted coffee while limiting oxygen exposure.
○ Under the screw-top lid, you will find a silicone freshness seal. Please do not remove or modify it. Keep it clean and dry, and ensure it is properly seated after each use to help maintain freshness and prevent unwanted moisture from entering the tin.
⚠ For the best coffee quality, avoid storing the tin in the refrigerator or freezer. Temperature changes can create condensation inside the container, which may affect both the coffee and the tin over time.
