Shibru Dube - Brew Chart & Impressions
It feels so good to finally have a natural Ethiopian on the menu! After a couple of months without one, we are very happy to share this lot with you.
This coffee from Yirgacheffe is a beautiful expression of what many people associate with the region: blueberry and peach. The acidity is full of fresh stone fruits, and the fruitiness is also extremely sweet, think dried blueberries and strawberries.
The sweetness and body reminded us of milk chocolate, and if you ever had Glosette, you will know what we are talking about ;-)
There is also a very pleasant but not overwhelming flower tone to this coffee. To us, it felt like lavender.
