This honey processed coffee from Donalado Ambrosio is a nice addition to the menu. We always bought a lot of coffee from Mexico and we feel this origin doesn't get enough recognition. The range of profiles you can taste is so wide.
So after buying all of Donaldo's more mainstream production of washed coffee (aka the  Amatenango Medium+ roast),  we bring you a honey process from the same producer!

It's great to buy certain types of coffee from specific producers, but real stability at the farm level can reach new heights when roasters start buying across all quality and processing level from the farmer partner.

This beautiful honey process lot is such an incredible addition to our menu.
You get a lot of what you expect from a Mexican coffee. Some subtle chocolate and a ton a brown turbinado sugar. You'll also find the coffee can be a bit citrussy and buttery as well.

But it's also tropical (think pineapple) and we got hints of stone fruits in the finish as well.

Our favourite thing about this coffee is the mix of heavy body and texture and the tropical tone.
And don't get fooled by this being a relatively light roast: it makes astonishing espresso, and if you pull a long shot in time and short in ratio, it makes of a very nice milky drink.

We highly recommend waiting at least 10-12 days to brew this coffee as we've seen our light roast peak in flavours around 20 days.

This coffee was bought through a COOP called Siprocafe. There is a smaller group of 8 farmers from Amatenango within that COOP that Osito has been buying from since their first year in Mexico.
This specific lot it from one of those 8 producers.

As Osito's longest and most important relationship in the country, we wanted to support them as much as possible so we took this beautiful micro lot on top of buying their decaf and another beautiful washed coffee for our best selling darker roast.
Price paid to Osito for the green coffee: 6.55USD/lb
(+ 40 cents/lb in shipping)
FOB Price Osito paid at origin before export: 5,25USD/lb (export cost ads another 0,35USD/lb)
Farmgate price (aka what the farmers received): 125 Pesos/kg of parchment (meaning around 3,50USD/lb of green coffee. This is a full dollar more for the micro lot vs the community blend we bought)

Local price in Chiapas at the time of buying: 75 Pesos. A recent spike in global coffee prices makes this difference between market price and what Osito is paying smaller than usual. As a comparison, last year the market was around 45/55 pesos locally but Osito was paying 70/85 pesos range.
Other costs: UNTAO, the exporter, is responsible for milling the coffee (removing the husk), storage, and bagging before export. (adding around 0,20USD/lb)
Red Beatle is a sourcing company operating in Mexico and Peru. They connect farmers with roasters and importers and do important technical work with farmers (agronomy, improving quality, better processing, etc) and are an important technical partner for many farmers. (their services adds between 0,30-0,60USD/lb)
